My passion for coffee began several years ago when I started looking for a way to make espresso at home (without a machine, because after travelling a lot my bank account was a bit grey).
At the time, I didn’t know much about the world of coffee. On the other hand, I had just arrived in Canada and was not at all satisfied with the coffee I was finding everywhere. Too insipid or sweet for my taste (the classic double double for those who know: double cream and double sugar… was not for me )
I was determined to find a way of making espresso without a machine. Needless to say, my search quickly reached its limits. But I learned a lot and, above all, discovered a real passion for this seemingly inexhaustible subject.
The aim of our site is to provide you with the best possible information on coffee: whether you’re just interested or already a coffee connoisseur.
Here you’ll find coffee enthusiasts and professionals, baristas and roasters, sharing their knowledge and expertise with you.

Théo Desprat – Barista and trainer
After making a 180° turn after my audiovisual studies, I chose the coffee route. I sailed from city to city, meeting new people to deepen my knowledge and skills.
I realized that passing on my craft was the right direction to take.
when I produced and directed several live Internet popularization programs.
Today I’m lucky enough to teach the science and preparation of coffee in the French Ministry of Education, alongside my job as a barista.
This passion for passing on my craft and its products is what gets me up every morning to write a course or an article and go to turn on the lights in my bar.

Dimitri Grodwohl – Roaster, trainer and consultant
My interest in coffee dates back to 2014, when I discovered specialty coffee by chance at a Bordeaux address (the Black List café). Previously, I only drank tea (I’d also done a number of tea and spirits tasting workshops) and didn’t like coffee because it was so bitter! What a slap in the face it was when I took my first good shot!
At the time, I was an air traffic controller in the French Air Force, and as I was approaching 10 years of service, I was looking for a career change! It was then that I naturally began to develop my interest and skills at home through books and practice, and then quickly through roasting and barista courses.
I then worked as a barista and roaster’s apprentice (still at the Black List, but also at the Alchimiste) to learn my trade and rub shoulders with the clientele of the time, who were in the midst of discovering good coffee and hearts in lattes.
Well aware that France was lagging behind, in 2016 I headed to Australia to learn from the best. First as a barista, then as training manager, the great Padre coffee roastery in Melbourne made me the professional I am today: precise, meticulous, curious and sharing.
Since 2017, I’ve been the co-founder and coffee manager of Oven Heaven coffee, a Bordeaux-based roaster of specialty coffees focused on supporting specialist establishments and training baristas. I believe in a coffee industry that takes responsibility for building better, more sustainable, transparent and higher-quality consumption of our products, and in sharing knowledge.
I personally enjoy all coffees as long as they’re of high quality. I try to appreciate products for what they are, not for what I’d like them to be.
I’m a certified Barista Hustle coach, a coffee roaster, the French ambassador for the Slayer brand of espresso machines and the French agent for the Garanti brand of coffee roasters.
These multiple roles give me a complete and holistic vision of coffee, which I’d like to share with you here, with a good cup of coffee in hand of course.

Julien Fichot – Roaster and graduate of the Specialty Coffee Association
Having been involved in the world of specialty coffee for several years, I like to challenge preconceptions in order to discover coffee’s secrets.
I discovered this world by chance, ordering an aeropress in a coffee shop, simply driven by curiosity about the name.
After this discovery, I gave up my old life and went into specialty coffee. Before graduating, I started working for a coffee roaster and, at the same time, for SCA France as a volunteer manager.
In the end, I decided to spend a year in Brazil, meeting producers and roasters, as well as baristas and other professionals in the Brazilian coffee world.
The next challenges I’d like to take up are roasting and training, because today I really enjoy sharing what I’ve learned through meetings, tastings, workshops and writing articles on the world of coffee.

Olivia Gonçalves – Trained barista and coffee shop owner
As a student, I used to spend whole afternoons in coffee shops. At first, I only went there to work on my courses, but then I fell in love with the world of the café, its atmosphere and its infinite possibilities!
This passion had really taken root because, after my Master’s degree, I decided to switch to coffee. I trained at a barista school and subsequently opened my coffee shop in 2016. I’m still learning every day, and today I’d like to share my discoveries with the fabulous coffee community.

Cedric Blanchard – Passionate about coffee
Coffee is first and foremost a childhood memory: the smell of coffee after dinner at my parents’ house. Later, coffee became a way of socializing, with a pool cue in hand and a cup of coffee on the rim. A few years later, it was the coffee vending machines at college, then at work.
With 4 or 5 coffees a day now, people think I’m addicted, but I’m not! My coffee is my moment, my moment of introspection during the day. So, gradually, I came to realize that these moments of pause in a hectic daily routine deserved better than a banal industrial product.
Some reading on the Internet, machines as birthday or Christmas presents, a little century-old store near my home where coffee is roasted on the premises, and that’s how I ended up here talking espresso with you!

Alexis Dumetier – Journalist
I’ve always been fascinated by epicurean pleasures, and for the past 10 years I’ve had the chance to share my culinary discoveries through my work as a journalist for various magazines.
But I’ve also been working for television for the past 15 years on programs, documentaries and subjects relating to the world of gastronomy.

Pascal Van Malderen – Passionate about coffee
One of my earliest memories of coffee is the smell of it when I woke up at my grandmother’s house. I can still see her with her kettle and filter holder on top of the big wicker thermos flask.
After that, coffee was my constant companion. Before leaving for school, for example (even if it was cut with chicory). When I moved in, I used the check I won in the school contest to buy a small espresso machine, a bit cheap, but which has been with me for many years.
I now swear by the Moka coffee maker, traditional at home, electric in the office.
Whether it’s an appointment, a text to write or any other task, she’ll start with a black coffee. Always.

Mike Rustad- Café aficionados
My coffee journey began in 2016 when I found an espresso machine for a few euros at a thrift store and instantly fell in love with the process.
I love testing new extraction methods and techniques. I recently rediscovered the aeropress, and it’s amazing how versatile this little object can be, producing so many different cups. As I’ve recently found another love for writing, coffee texts of course, I’ve also embarked on writing a novel.
Apart from Meilleurcafe, I like to travel the world with my wife.
